A Sandwich a Day: Milanesa Cemita at Cemitas Puebla

Why do I keep going back to Cemitas Puebla? Sure, there are other truly remarkable sandwiches in town. It's just that no matter how many cemitas I've consumed—and I've had many—I always manage to be surprised by some small detail. Occasionally, I'm struck by the flavor and depth of the housemade chipotles; other times I can't get past the creamy and tangy queso Oaxaca that is imported straight from Mexico. (Monterrey Jack doesn't stand a chance against this stuff.) Certainly, I've never been disappointed by the crusty sesame seed roll.
And I haven't even gotten to the fillings. Though the Atomica—a gargantuan creation featuring three different kinds of pork—is the most talked about offering, I often feel like it is really more of a dare than a lunch. (A delicious dare, by the way, but a dare nonetheless.) A cemita certainly isn't light, but it is carefully proportioned, and I don't like to mess with the balance.
Luckily, all three of the meats in the Atomica (Milanesa, carne enchilada, and jamon) are delicious on their own. But if I had to pick one, I'd probably have to go with the Milanesa ($6.50). The super thin pork cutlet crispy and surprisingly flavorful, making it an ideal filling for this remarkable sandwich.
