It goes without saying that Chicago gets very excited when anything involving Paul Kahan opens to the public. He and his rotating team of collaborators have been behind some of the most exciting restaurants in the city (including Blackbird, Avec, The Publican, and Big Star). Publican Quality Meats, his latest venture, is a butcher shop in the rapidly-transforming meatpacking district on Fulton Market that also serves sandwiches, stocks, and hand-picked provisions from Chicago and beyond.
