The Brunch Dish: The Corned Beef Hash at 2 Sparrows
Ever since two former Charlie Trotter's chefs, Gregory Ellis and Steven Fladung, opened their new Lincoln Park breakfast and lunch outpost, 2 Sparrows, last year, it's been on my "must brunch" list. (And yes, that list does actually exist.) From foie gras and cherry compote pop-tarts to maple and bacon doughnuts, 2 Sparrows has the market cornered on sugary brunch appetizers.
But one cannot subsist on pastry alone (though one can try). After splitting the apple and lemon thyme icing pop-tart ($4) with my brunch companion (which was as delicious as it sounds) I found my corned beef hash ($10) to be the ideal hearty accompaniment to the sweet snack. The hash was perfectly cooked and was served with a banger, a poached egg, and fresh greens on the side. The portion was slightly larger than I expected, but otherwise it was a delicious ode to the traditional dish.
