Considering the number of excellent barbecue restaurants in Chicago, I figured that a place like Wrigley BBQ, which recently opened late October, could take on the challenge of serving me a delicious pulled pork sandwich ($6). After ordering my sandwich for takeout, which consisted of the essentials wrapped up separately, I put together my combination of juicy pulled pork and the fresh coleslaw between the two buns and I took my very first bite.
The pulled pork itself was sweet, smokey, and was very tender. The wood-fired smoker helped bring out these burst of flavors and texture of the meat. The coleslaw wasn't soggy as if the vegetables had been marinading in the dressing all day; it seemed to have been lightly tossed in this tasty concoction of vinegar, mayonnaise, and pepper. The only very slight concern was the bun; it was very soft, but almost too much so it soaked up most of the juices from both the coleslaw and pork to the point where it started falling apart. I would keep a fork in handy while eating this sandwich—you'll need it. After having this fulfilled barbecue experience, I'm looking forward to trying their other options.
