Slideshow SLIDESHOW: Behind the Sweets: Christine McCabe Bakes Up Raspberry Pop-Tarts at Interurban Cafe

When Christine McCabe went on a search for a production kitchen for her soon-to-be-opened stand in the Grand Street Red Line Station, she found a great space in an alley off the intersection of Armitage and Halsted. The kitchen happened to feature something that made it pretty hard to pass up: a large walkup-style window that opens right into the alley. Now Christine has opened up Interurban Cafe & Pastry Shop out of that production kitchen and has been able to build her customer base as the finishing touches are put on her stand in the L station, which is set to open sometime in February.

Since Christine trained in both sweet and savory—and worked every station at Charlie Trotter's before working as a consultant for several years and opening Sugar: A Dessert Bar and Glazed & Infused—Interurban offers a rotating selection of soups, chili, and focaccia as well as an ever-changing menu of sweets such as scones, bread pudding, and a delightful take on the pop-tart, which Christine makes with a pie dough recipe adapted from her grandmother and a variety of homemade fillings. If you'd like to stop by Interurban's alley window, find your way to the northwest corner of Armitage and Halsted. Walk west along Armitage until you reach the first alleyway. Take just a few steps into the alley and you'll find Interurban's window, a bright beacon of warmth, tucked away to the right.
