Behind the Sweets: Lindsay Zamora Makes S'more Pie at Hoosier Mama Pie Co.
If you happened to pass by Hoosier Mama Pie Company's tiny storefront the day before Thanksgiving, you might have been shocked to see a line stretching halfway down the block. Then again, maybe you've tried some of Hoosier Mama's comforting homemade pie and that line didn't shock you one bit. In that case, maybe the numbers will: Lindsay Zamora, who started as an intern a year ago and who is now the manager, told me they made 1,500 pies in the three days leading up to Thanksgiving. This would be an impressive feat for any pie shop, but if you consider the modest size of Hoosier Mama's kitchen and the fact that all of their pies are made by hand you might just start to understand how serious their dedication to pie is.
Owner and good friend of Serious Eats, Paula Haney, graciously allowed me into her bustling kitchen where Lindsay was kind enough to show me the process behind their S'more Pie. This is one of many rotating pies, so if you're craving this picture-perfect pie after clicking through the slideshow, be sure to call ahead for availability or better yet, give them at least 48 hours notice and place a special order. Toasted meringue is always a welcome addition to any party.
January is a great time to stop by Hoosier Mama since not only has the holiday rush died down, but it's also the time that they start featuring new flavors.
