I was instantly charmed when I read that Chef Timothy Cottini personally reached out to Grub Street with the earnest request to check out his Lincoln Square restaurant, Fork. Grub Street did check it out, and they found a former Lettuce Entertain You chef doing high quality farm-to-table food in an unassuming neighborhood joint. So after I took one glance at the dessert menu and saw Sticky Toffee Pudding, you can probably imagine what happened next. It started with an email and ended with a whole lotta sugar and butter. In my happy tummy.


I've been a big sticky toffee pudding fan ever since Haagen-Dazs put out a limited edition flavor during my freshman year of college. That ice cream contributed at least 5 pounds to my Freshman 15 and remains in my Top 3 Favorite Ice Cream Flavors of All Time. Fork's rendition is triple-bathed in a rich, caramelly toffee sauce and also features a unique and astoundingly complementary porter ice cream. The recipe was developed by one of Fork's co-owners, Paula Byers, when she made it for friends and family over the holidays, and Chef Cottini was not only kind enough to walk me through the recipe but also willing to share it here!
