Most of the ingredients in the Sonoma salad ($12) at Hub 51 are pretty familiar: avocado, walnuts, cranberries, sunflower seeds, and grapefruit. But the amalgamation of these flavors and textures with a light mustard vinaigrette atop a bed of mixed greens creates one of the healthiest and tastiest salads in recent memory. Tart and juicy grapefruit contrast with sweeter dried cranberries while a hunk of creamy avocado emphasizes the crunch of walnuts and sunflower seeds.
What really sends this salad over the top, though, are the sunflower sprouts—my favorite ingredient. The sprouts, much crunchier than the other greens, are like sunflower seeds in veggie form, adding a different kind of nuttiness to the cornucopia of flavors.
The serving is huge, and with healthy fats from avocado and nuts, this salad can actually be a satisfying lunch. I'm adding this to my list of easy-to-prepare options for Meatless Monday.
