Slideshow SLIDESHOW: Behind the Scenes with Mott St. and Trenchermen at Fête Chicago Night Market

The spring 2013 installment of the craft foods and goods fair Fête Chicago took place this past weekend, kicking off with a sprawling Night Market that attracted capacity crowds to a two-level event space in the West Loop. On the frist floor of the Night Market, the organizers had gathered a who's who of local producers to hawk their wares, which ranged from handmade syrups to stationery to textiles to delicate ceramics. The second floor was largely devoted to perishable food and drink, including cocktails from Longman & Eagle and grilled octopus salad from the forthcoming Parson's Chicken and Fish.

But while weaving through the capacity crowd to window-shop the various food menus in search of dinner, I quickly realized that not one but two vendors had really went for it and chose to serve up freshly cooked noodles at their stations—no small undertaking considering the throngs of hungry attendees.
