There is beauty in the veggie taco. That was one of the many surprises uncovered during my two trips to Mexico. While meaty options were far more prevalent, vegetable fillings abounded, and they were often the most colorful and enticing option. I've been on the hunt for similar tacos in Chicago ever since.

Chicago is a steak taco town. Sure, we have loads of other enticing options, but if I had to pick the most common taco filling around, carne asada reigns supreme. Here are my eight favorite.
Are there actual differences between the many brands of corn tortillas in Chicago? Unlike many other foodstuffs, they don't travel well, and for the most part they need to be eaten on the same day they are made or else they turn brittle and dry. Luckily, Chicago is apparently awesome at making tortillas, at least according to Rick Bayless.
