A relative newcomer to the barbecue trail, Chicago's Smoque has quickly made a name for itself with meticulously studied barbecue staples. Believe the hype: The Irving Park smoke joint's beef brisket sandwich ($7.45), a standout in what is historically a pork rib town, is perfectly executed.

Split into equal cuts of flat and deckel, Smoque's brisket sports a peppery, smoky bark and tender, flavorful meat.
The "moist" pieces are especially delectable. Striated with salty, smoky, well rendered fat and collagen that only 15 hours and an expert eye can produce, they make this one freestyle barbecue sandwich you'll be tempted to order by the pound.
