When chef Justin White remade Small Bar Fullerton's menu last year, he was adamant that the new food wasn't going to be expensive. Instead, White wanted use classical cooking techniques to transform humble ingredients into something unique. If this new mission could be summed up in one dish, you'd have a hard time finding a better example than the Smoked Chicken Club ($10). Rather than piling cold cuts and bacon onto toast and calling it a club, this sandwich features de-boned chicken that has been rolled up, brined, smoked, cut into 1/2-inch slices, and sautéed to order—a process the chef claims takes nearly three days to complete.
But the best part about this sandwich is that you don't have to know any of the back story to appreciate the fact that you're probably eating one of the best chicken sandwiches in Chicago. Besides the unbelievably juicy chicken slices, a thin slice of funky brie is melted on top. That's all balanced by a tart tomato jam, which helps perk up the other flavors without getting in the way.
