St. Patrick's Day, in Ireland at least, may be a day of reverence and shockingly little vomiting, but here in Chicago—which is still home to one of the largest St. Patrick's Day parades in the world—we've made the holiday our own. The Chicago River isn't dyed green for nothing.
The same could be said about corned beef. Sure, corned beef and cabbage may be the meal most associated with the holiday, but some disagree that it actually is Irish. According to Slate, corned beef probably only started to be eaten by Irish American immigrants in New York during the early 20th century. That was during that same time that the corned beef sandwich—a mess of the cured meat between two slices of rye bread—was popularized.
So, the corned beef sandwich is American but it's also sort of Irish, which pretty much sums up the many St. Patrick's Day parties around town.
