"I knew that the radiatore holds a meaty ragu well, so it seemed like a natural fit for the braised duck legs. We didn't want to make it too thick, with a whole lot of tomato. We just wanted to make a nice braise and knew that this pasta would help carry it."
Pizza with Mortadella, Pistachios, Shaved Red Onions, Ricotta
"We've had a little practice with making mortadella at Old Town Social, so we're comfortable with that. The crust was the hardest part. Like when we tried to make a hot dog at Old Town, it sounds simple, but it took forever. The flour for the pizza is milled in-house, just like the pasta, but it took us literally thousands of doughs. I am pretty happy with where it is now."
The Side View
The Neapolitan-style pizza features a raised cornicione with a complex hole structure. Though it is speckled with char marks, the end crust is actually on the lighter side.

The bottom also has a decent amount of coloration, though not quite as much as some I have seen lately (some would say that's a good thing).
The massive new West Loop restaurant is located right on Randolph. Though it had a soft opening of sorts yesterday, Nellcôte officially opens today.
