"The meat is chopped up and cooked until it gets a good sear. That's what we are looking for. We are also using Black Angus beef instead of the commercial grade. I'm sad we can't use the great bread in Chicago, but we gotta use the Amoroso rolls from Philly. That makes us the only place to serve an authentic cheesesteak in Chicago."
"You can get the cheesesteak however you want it. I don't mind if any one wants to out ketchup on it, I don't mind. Hot sauce, that's fine. I like it with white American with onions, though we say 'wit' onions. Sometimes I add a little bit of shredded lettuce—but only if I want to be healthy."

"It's thin crust, but it's East coast style, so it doesn't have a cracker crust. It's chewy. Also, instead of a sweet sauce, this one is a little spicy. We also have a great collection of toppings you can add."

"The fries are tossed with just a little bit of celery salt. This is our nod to Chicago. It's just enough that people can't quite place the flavor."
Coconut Chicken ($6.95)
"We wanted to be a place that served high quality dishes that you would recognize, but then put a twist on them. The chicken strips are breaded in-house, but instead of serving them with a honey mustard, they come with a horseradish yuzu marinade."

"This is our play on the Tequila Sunrise. It features tequila, peach nectar, ginger beer, and a splash of cherry juice."
Cherry Italian Water Ice ($3.95)
"It's the same thing as an Italian ice, but we just call it a water ice. It isn't as sweet as some versions around town, but it's basically the same thing."
