Each month Falafill, a Lakeview falafel shop, brings in a Chicago chef to create a wrap, and then donates part of the proceeds to a charity of the chef's choice. It's a great idea, with one serious flaw: the wraps are only available for a month.

Paul Virant (of Vie and Perennial Virant) used ingredients from Three Sisters Garden in Kankakee, Illinois for his sandwich ($6.50, $1 of which supports the Frontera Farmer Foundation). The thin pita is filled with organic black bean falafel, pickled peppers, spicy mayo, pea shoots, cilantro, and lemon-garlic vinaigrette. While I'd love a whole bowl of the snappy pickled peppers, the star here is the falafel. Nicely spiced, it has a lightly crunchy exterior and a moist, smooth center. The ingredients work well together, making for a fun spin on a traditional falafel wrap.

Better hurry, though; Virant's sandwich is available through April 30.
