Tips and tricks for making the best sandwiches at home.
The walleye pike sandwich ($12.00) at Mermaid Bar & Grill in western Michigan is way better than it has any right to be. First, it's in Saugatuck, one of those small tourists towns in Michigan that Midwesterners retreat to during the summer. Second, the Mermaid's location right on the edge of Kalamazoo Lake, means that those same tourists would happily line up for hours to dine here for the view.
But even though it could take the easy route and dish out some tired old fried fish sandwich, Mermaid brings it's A-game here. The fried fillet is crispy and thin, which lets the white meat of the walleye come through. It's served on a toasty sour dough roll, with a slightly spicy Cajun tarter sauce. This also happens to go particularly well with a glass of the locally made vino, which, like the sandwich, is a genuine surprise.
