Sometimes a dish's name is so ambiguous you have no clue what it will look or taste like. Other times it so perfectly sums up the dish that nothing is left to the imagination. That's the case with the crispy shrimp rolls ($2.90) available for dim sum at Cai in Chinatown. The rolls are—wait for it—crispy and filled with shrimp! That's honestly it—no other ingredients to get in the way.
What the name fails to relate, however, is just how crispy these little suckers are. Where some monster egg rolls are more batter than filling, the crackly shell here is paper thin and remarkably devoid of grease. That allows you to taste the plump pieces of sweet shrimp. Great on their own, they do benefit from a quick dip in the sweet dipping sauce.
