A fluffy cloud of baked egg fits snugly between two crunchy slices of baguette in Floriole's veggie breakfast sandwich ($7). Tangy whipped goat cheese on the bottom slice and sweet onion jam on the top are perfectly proportioned so you taste both in each bite. Several leaves of fresh spinach add a hint of crisp bitterness. (Carnivores can add a couple slices of Nueske's bacon for $1.50.)

I don't often eat breakfast sandwiches, but this is one of the best I've ever had. The baked egg is so spongy and light, similar to the texture of the egg in Sandra Holl's famous quiche. I often find spreads like goat cheese or onion jam to detract from the sandwich, but with a mild main ingredient like egg, they add necessary flavor. As for the baguette, well, it is one of the best in America.
