Another glorious Baconfest Chicago has come and gone. For you uninitiated folks, Baconfest is exactly what it sounds like—it's a wild celebration of all things bacon. If it sounds gluttonous and insane, yes, it is gluttonous and it is insane. But it's also thoughtful. These bacon dishes are inventive, interesting, and entertaining. This year, Nueske's Applewood Smoked Meats donated over 8,000 pounds of cured and smoked pork belly, and with three whole sessions featuring different chefs at each, every chef got to play. You can tell how much fun all of them are having just by the food descriptions alone. I attended last Saturday's dinner session.
So without further ado, check out some of the fun things I saw at this year's Baconfest!
